BBLTA Chicken Salad

Bacon, Basil, Lettuce, Tomato, Avocado Chicken Salad . . . Whew! I’m out of breath just saying that.

How about BBLTA Chicken Salad for short?! You gotta love acronyms for recipes like this {or if you work for the government :0)}.

As a salad lover, I couldn’t resist the urge to convert the beloved BLT into a summertime salad. Of course, I had to add a few twists to this classic. Toss in little basil (yes, I add basil to practically everything when I grow it in the summer), avocado, grilled chicken, and balsamic vinaigrette. And my-oh-my, you’ve got a salad that’s pretty and delish.

BBLTA Chicken Salad

  • 6 cups leaf lettuce or spring mix
  • 6-8 small tomatoes, sliced
  • 2 grilled boneless, skinless chicken breasts, seasoned as desired and sliced {~I used a Jerk Rub to season my chicken. It worked beautifully with this salad.~}
  • 1 avocado, peeled, pitted, sliced {~If desired, squeezed the juice of a lime on avocado to minimizing browning.~}
  • 4 slices cooked bacon, chopped
  • 20 basil leaves, rolled up and cut into thin strips {like confetti}
  • Balsamic vinaigrette {click here for my favorite version}

Arrange lettuce in a large bowl. Add tomato slices, grilled chicken, avocado slices, and bacon. Top salad with basil strips and drizzle with balsamic vinaigrette. Makes about 4 servings.

  1. If you served this at a party… and I was lucky enough to be there… you’d find me hidden away with it in one of your closets after you thought everyone had gone home! A masterpiece!
