Homemade Thousand Island Dressing

As a salad lover, I’m always on the lookout for ways to jazz up my salads. And one of the best ways to do that is with a delish homemade dressing. These days, I rarely use store-bought dressings, mostly because I’ve discovered homemade dressings are fairly easy to make and their ingredients and flavors tend to be better.

I mostly make vinaigrette’s, but every once and while I whip up my favorite creamy dressing ~ Homemade Thousand Island Dressing. As a child, this is the dressing I would choose over all others. And as a grown-up, it still ranks toward the top of my list. In this recipe, the veggies add a delightful fresh crunch to the dressing.

This versatile dressing works marvelously as a flavorful condiment on a Reuben sandwich or spooned over a green salad. If you have a little extra time, make up homemade mayonnaise. You won’t be disappointed. 

Thousand Island Dressing

From Salads by Elsa Petersen-Scheperlern with slight modifications
Course Salad
Servings 2 cups

Ingredients

  • 3/4 cup mayonnaise
  • 1/4 cup plain yogurt
  • 3 TBSP chile sauce
  • 1/2 green bell pepper, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 1 tsp onion, finely chopped

Instructions

  • Mix mayonnaise, yogurt, and chile sauce in a bowl. Add bell peppers and onion and mix well. Serve immediately or refrigerate and use within 3 days.
